Rhubarb Cake Recipe

Looking for a sweet treat but tired of the same old cakes? Look no further than this awesome rhubarb cake recipe, use homegrown rhubarb or purchase from the store. This recipe includes no eggs so it is allergy friendly!

Ingredients

½ cup self raising flour

6 tablespoons butter

5.5 tablespoons of sugar

3 sticks of chopped rhubarb

Milk to preferred taste & texture

Directions:

  • Grease and line a 7” diameter loose bottom baking tin.
  • Pre heat the oven to 160 degrees (fan oven)
  • Mix the flour and butter together.
  • Add the sugar and fruit to the dry ingredients.
  • Mix in a splash of milk to combine all the ingredients so its quite a stiff mixture. Use a metal spoon.
  • Sprinkle the top with sugar and bake for 45 minutes.
  • Check if the center is cooked using a wooden skewer or cocktail stick, if its clean then great. If not then bake for a further 5 minutes.
