Lemon Organic Chicken

Looking to add a little zest to your classic chicken recipe? This lemon organic chicken is packed with flavor and a perfect dish for all year! A citrus blast of lemon and a dash of sweetness from honey creates a blend of flavors that will elevate even the most basic of plates. Lay this chicken over a bed of rice or pair with a medley of in-season vegetables (summer squash & zucchini are two of our favorites!)

 

Ingredients:

  • 4 boneless skinless chicken breasts
  • 2 lemons sliced thin
  • 4 tablespoons fresh lemon juice
  • Fresh Rosemary – to taste
  • 2 tablespoons Olive Oil or Smart Balance
  • 1/3 cup Organic chicken broth or dry white wine
  • 2-3 cloves garlic or 2 teaspoons minced garlic

 

Directions:

      1. Preheat oven to 400 degrees and grease a baking sheet or large casserole dish.
      2. Melt butter in a large skillet over medium-high heat. Add chicken and cook chicken 2-3 minutes on each side just until browned. Transfer chicken to prepared baking sheet.
      3. In a small bowl whisk together chicken broth, lemon juice, honey, garlic, thyme and salt and pepper.
      4. Pour sauce over chicken and add fresh rosemary and lemon slices
      5. Bake 20-30 minutes (closer to 20 for smaller chicken breasts, closer to 30 for larger) until chicken is cooked through.
      6. Every 5-10 minutes spoon the sauce from the pan over the chicken.
